Pretty Pasta (Pasta ba Sabzijat va Jambon Khoshk)

  Boil pasta noodles in water with added chopped spinach (10 minutes)
Add one table spoon of salt, add  a few drops of olive oil
 Saute' shredded carrots and some broccoli(optional)  in olive oil
Add a few cloves of chopped garlic
Add your favorite dried meat (chorizo, Prosciutto or Serrano ham are the best) 
Add chopped sun dried tomatoes (Optional) 
 Drain you pasta and do not wash with water
 Add the meat and carrots to the pasta
Add your pasta sauce (White pasta sauce or Alfredo sauce)
Mix and let stay on low heat for 4-5 minutes

Serve with toasted garlic bread

Rice & Herbs Soup (Aash Berenj)

 Boil rice(short grain is preferred) with 2 tablespoon on salt
 Add lentils
 Add your greens: Parsley, spinach, cilantro (Dill optional, but use very little)
 Add turmeric, black pepper and a little red vinegar 
 Add a can of chick pees (And a can of white beans if you like)
 Add saute' onions (which I prepare and store in the refrigerator in jar with oil covering the onions)
 Stir and cook on slow flame for 1 or 2 hours
Serve with cream of whey (Kashk) or sour cream, and topping mixture of fried chopped garlic and dried mint

Home made Fresh Yogurt (Must-e-Khaneghi)

 Boil milk slowly
 Let cool to room temperature
 Beat some yogurt and activate the bacteria, add to milk and stir lightly. 
Cover in blanket and leave it for 6-8 hours
Do not shake or disturb the mixture
Take it it out 
Live in the refrigerator for 2 hours
