Tomato Omelet (vegeterian)

Ingredients:
(Serving for 2)

2 tomatoes sliced
3 eggs
2 tablespoons of extra virgin olive oil
1 fistful of graded cheese (cheddar or mozzarella)
Pinch of salt
Pinch of black pepper

How to make it:
In a non-stick pan heat the oil on medium heat
Lay the sliced tomatoes and let stand for 1 minute until a bit soft, sprinkle the tomatoes with salt
Beat the eggs lightly in a bowl just a few seconds
Pour the eggs on the top of the saute' tomatoes
Reduce the heat to medium
When egg is a bit solid sprinkle with graded cheese (optional)

Serve hot with toasted baguette/pita/lavash bread

  1. I have not seen any omelet this beautiful in my life. This is more like breakfast pizza!
