Persian grilled chicken with hot sauce

 If you have left over grilled chicken add it to lavash bread with a bit of thin tomato sauce rubbed on bread with a dash of Sriracha sauce (best pepper base hot sauce), cover with pizza cheese slices and bake in a preheat oven on 400 for 10 minutes.

My little citrus tree!

My citrus that I saved in the garage during the cold winter and moved to the back yard patio is loaded with little lemon or bitter orange.
 This is the 3rd year that this little tree is in full production even being in cold weather of Georgia!

Salmon Kabob (Kabob-e-mahi)

Marinate chunks of salmon fish in olive oil, liquid saffron, fresh lime juice for at least 2 hours.
Sprinkle with sumac, black pepper
Put on skewers and grill 4-5 minutes on each side 
(Taste better with real wood/coal fire)

 Side grill: corn, sweet Spanish pepper, tomatoes

Chicken kabob
Salmon kabob
Shrimp kabob
Grilled salty corn (Balal)
Sweet Spanish peppers

Side of:
Cabbage rice
Zereshk polo (barberry rice with orange peels and slivered pistachios)
Grilled tomatoes

And of course:
 Must-o-khiar (yogurt/cucumber dip), Must-o-moosir (yogurt/shallots)

Quick Chicken Olive (Morgh va Zeytoon Foori)


Saute' chicken beast in olive oil with chopped onions




Add whole cumin seeds (Persian from city of Kerman is the best)


 
Serve with white rice
Enjoy!

Chichen Kotlet (Chicken Burger Sliders) (Kotlet Morgh)


 Ground chicken mixed with mashed potato 
Adding graded onions, 2 eggs, 1 cup of bread crumb, salt, pepper, turmeric 
 Mix and fry until both sides are brownish


Serve with bread, yogurt and pickles
